如何做出最好吃的红烧大排

有位朋友问我:“子瑜妈,有没有红烧大排的做法!我不会做!”
我冒汗的回答:“没有发过这个帖子哎!”
朋友再问:“我不会做,做的很柴,还咬不动?这是怎么回事情?”
我这下明白了:“那我明天做下,发成帖子,你看下就知道其中的原因在哪里了?”

材料:
大排6块 葱结1小把 蒜瓣3个 姜片5片 生粉30克 料酒5克 (大料花椒辣椒少许 没有可不加) 生抽20ML 老抽10ML 热开水800-1000ML

制作步骤:
1 将大拍洗干净,在清水中浸泡15分钟,取出,沥干水分备用;
2 将大排平放在案板上,用肉锤或者刀背将大排上的肉剁松弛;用刀的请注意安全,不要剁的时候不要举太高,不要用力过猛;
3 将大排放在碗中,撒上料酒、姜片拌匀,腌上10分钟;
4 准备好油锅,将大排两面拍上干淀粉,当油开始冒青烟时,将大排轻轻投入,炸至两面微微金黄,捞出沥干备用;
5 锅中留底油,煸香葱姜蒜大料等,投入大排略翻炒,加入生抽和老抽,拌匀后加入开水,盖上盖子,小火半个小时即可。
6 半个小时侯之后,准备出锅,如果汤汁还很多的话,加点点白糖,开大火将汤汁收干即可。
7 烧菜不可离人,以免汤水烧干。
