红枣这道菜,
在我们江南地区,基本上每家餐厅都会出现的一道凉菜,
尤其是过年期间,几乎每桌必点,
类似的还有糯米红枣\桂花红枣\椰丝红枣等;

红枣的“枣”同“早”谐音,所以通常人家结婚的时候,
用红枣与花生来祝福新人早生贵子,
从此,枣子便被带入了喜庆的日子。
在新年里,人们吃红枣,预祝新的一年生活能大展鸿图,
红红火火。

说到醉红枣,不得不说下酒,
特地请教了师傅,用什么样的酒最适合做这道红枣?
多少的比例才是最完美的?
师傅建议用5年陈的黄酒即可。
酒量量力就行,为了适合更多人的口味,建议不要放太多了.

加酒有两种方式,一种是加入酒之后再煮一会,这样酒味会比较淡点,
适合广泛人群;
另外一种加法是等煮好的红枣完全冷怯后,再加入酒浸泡,建议加上
盖子密封浸泡,
这样酒香比较浓郁;

材料:
普通小红枣200克,清水500ML,冰糖40克,黄酒100ML,
步骤:
1 普通小红枣200克,清洗干净,用500ML清水浸泡1天,不要把水倒掉哦,

2 连浸泡的水一同倒入砂锅中,加入40克冰糖(大概有15粒的样子)。
(在煮的期间开盖子几次,搅拌几下,让冰糖完全融化)

3 盖上盖子,先用大火烧开,再改用小火炖半个20分钟左右。(切勿用大火久炖)
4 煮好待完全冷怯,汤多的话可以倒出1杯子的汤来给孩子喝,非常的美味与营养。
5 在冷怯的枣中加入8勺(100ML)5年陈黄酒(不胜酒力的少加点,喜欢的还可再多加点。)
6 放入搪瓷碗或者玻璃碗中浸泡1-2天便可以开吃了。建议每次不要超过15颗为宜。

主妇心得:
1 一定要用小火煮,这样枣子的型比较完美;
2 在枣子的选择上,这种普通小红枣,金丝枣比较适合,黑枣更合适做补品类,
大枣更适合做酒枣;
3 黄酒可以在煮的时候加,这样酒味比较清淡,适合更广泛的人群;但是最好建议
冷却后再加,毕竟醉枣么总要有点醉意才好;
4 枣子浸泡1-2天食用,口感比较香醇,2天后请尽快食用即可;
5 每次建议15颗以内即可,不要空腹食用,糖尿病人慎食;

煮红枣的时候可以适当多放点水,这样可以多出几杯红枣水来,
这里给蛋蛋整了一杯红枣水,太美味了,后来自己也整了一杯,呵呵~~~
再后来,发现锅里没汤了,娃哈哈~~~~

蛋蛋刚才踮着脚,用手去勾壁橱里的几颗糖,
我说:'你在干吗!'
她迅速的把手缩回来说:'我在给糖看我的手!'
我笑死了~~
