元宵节,貌似一定要吃元宵.
吃元宵应个景,吃的是那份心情,
吃什么都一样的开心.
在此,

这款汤圆做起来非常的简单.
但是如果你是第一次包汤圆,
也许在包的时候会散开,
在这里,我为大家示范一种怎么包都不会散的办法,
包您不会的进来,会了出去.
不兴往下看,呵呵.

[经典款豆沙汤圆]

材料:
糯米粉200克 红豆沙200克 80度热的清水170克

步骤:
1 在案板上撒上干的糯米粉,将豆沙放上面,搓成长条状,然后用刀切成
小段,每个大概15克左右。目测差不多即可,将每个小段用手简单的搓成
小球.

2 用热水和面,这样和出来的面团比较柔软,包的时候不容散开。水要
一点点加,觉得可以揉成团了就停止加水,一般热水和面的话,水的分量比
面少个30%左右。冷水的话比例接近1:1。
(用热水和的面不用醒,马上可以包,热呼的时候很好包的,不容易散.)

3 准备一张保鲜膜,把15克糯米面团放在中央,然后将保鲜膜翻过来盖住
团,用手按扁,然后再用擀面杖擀扁平;

4 打开盖在上面的保鲜膜,放上事先准备好豆沙馅在上面,然后慢慢的从
周包起来.先把汤圆卡在虎口,可以有效的把面团包结实,再用手捏住收口
右转转,使汤圆更圆整.
5 将保鲜膜打开,如果没有漏馅,就用手再将汤圆搓圆就好了,如果漏馅
了继续往下看.

6 如果漏馅了,可以在顶部补上一点面团,轻轻按牢,然后把它翻过
来,补过的地方朝下放,然后再包起来,用手捏牢转结实了。再打开,手心
滴上一滴清水,将汤圆放在手心搓搓圆。你看,是不是很圆拉~将所有的汤
圆做好;

7 烧开一锅水,把汤圆下入,烧开后改小火煮上3 分钟左右。看到汤
圆浮在水面上了就是好了。担心不熟可以多煮1分钟, 尤其是速冻汤圆,很
有可能外熟里生的。

子瑜妈妈的制作心得:
1 用热水和面比用冷水和面更简单,包起来比较轻松,不容易散开.
2 汤圆在吃的时候,一定要注意安全,尤其是小孩子,一定要帮助掐碎了再吃,一次
不要给多了,2-3个就可以了,糯米制品不容易消化的.
3将所有的汤圆包好独立放置.可在放置盘上撒上干糯米粉防止粘底.如果包太多了
要保存,那需要放冰箱冷冻仓而不是保鲜仓;
4 煮汤圆切记不能用大火,水烧开后一定要改用小火,煮的时候记得轻晃几下锅子,
确保汤圆不粘底,现包的汤圆,一般3分钟左右,看到汤圆浮起就可以出果了,如果是
速冻的最好煮5分钟左右.如果汤圆比较大那也要多煮一会.
5 汤圆不宜包的太大,以免煮的时候里面容易夹生,外面则皮都烂了;
6 包起来觉得很困难的话可以将馅放的少点,皮放的多点,但是记得煮的时候小火
多煮会,以免面生;
7 包汤圆如果觉得很麻烦,可以直接搓成实心的小丸子,做小汤圆吃也是不错的选
择哦.

附包汤圆不散窍门:
糯米粉在包的时候容易散开,初学的朋友可能一下包不好.
要想面团不散,和面的水温很关键,建议直接用热开水和面,一开始用筷子搅拌和面,等不烫手后,用手和成面团即可,这样和出来的面团,粘性很强,不会散开,包的时候就容易的多了.
做彩色的汤圆:
您在和面的时候直接用热的汁水也即可.要将面揉透了,减去饧面的时间,直接分割包汤圆即可.速度要快哦~~~~~~~~
还有个办法就是先和一块小面团,然后放水中煮熟,然后再用这块面团来和其他的糯米粉,非常的轻松就
能和出粘性很强的面团。
