春天必不可少的一道菜---油焖春笋

话说,这无敌兔真是娇气的很,我一点都不会用,
这次的照片真是怎么拍都觉得不好看,
看来我得继续研究研究~~~~

话说
油焖春笋是我们杭州这边的特色菜,应该算是传统名菜吧,
这道菜做法简单,咸鲜适口,营养丰富,在春天,
几乎每户人家都会做下
这道菜。



材料:
5枝笋约500克 生抽30克老抽10克 白砂糖6克 鸡精2克 色拉油30克

制作:
1 将笋剥去外壳洗干净,将笋用刀背拍碎,再改刀成长约1.5寸的长段,
将笋焯水备用;

2 开大火将锅烧热,倒入油,油冒青烟时倒入笋翻炒半分钟,然后加入
生抽、老抽、白糖翻炒个半分钟,冲入滚烫的开水250ML,转小火焖煮;

3 小火焖煮5分钟左右,开大火收干汤汁,撒上鸡精,撒点葱花,拌匀
出锅。

春笋:春笋味道清淡鲜嫩,营养丰富。含有充足的水分、丰富的植物蛋白以及钙、磷、铁等人体
必需的营养成分和微量元素,特别是纤维素含量很高,常食有帮助消化、防止便秘的功能。所以
春笋是高蛋白、低脂肪、低淀粉、多粗纤维素的营养美食。现代医学证实,吃笋有滋阴、益血、
化痰、消食、利便、明目等功效。

注意事项:
竹笋不仅含有难溶性草酸钙,尿道、肾、胆结石患者不宜多食,而且还含有较多的粗纤维素,对于
胃肠疾病患者、肝硬化患者等可能是致病因素,容易造成胃出血、肝病加重等。
吃春笋还要防过敏,尤其是老人、儿童不宜多吃,每餐最好不要超过半根。为防止出现过敏,吃笋
应先少量尝点,如有反应,马上停止;如没有反应,可适当再吃。若用笋片、笋丁炒菜,要先用开
水把笋烫5~10分钟,然后再配其他食物炒食。这样既可高温分解大部分草酸减少弊端,又能使菜肴
无涩感,味道更鲜美。同时,吃笋时尽量不要和海鱼同吃,避免引发皮肤病。

主妇心得:
1 笋为刮物,不宜多吃,建议1周1-2次就可以了,不要吃的次数太多了;每次建议50左右即可;
2 笋含草酸,需要焯水后再食用,不然容易导致结石;
