6.热锅冷油加入玉米,青豆和胡萝卜丁翻炒,加一点水烧到快干的时候淋上香油;
7.在蒸好的鸡蛋羹上加半勺酱油,放入上面炒好的蔬菜丁即可。 最关键的三个绝招:
1.一个鸡蛋做一碗(吃饭的碗,再大点也没关系),大碗就两个鸡蛋,但不要三个鸡蛋,那样鸡蛋羹就不嫩了;
2.记住鸡蛋打的很均匀后,加入淡盐水,这是最大的窍门可以不让底部有沉淀,自己可以先尝尝这淡盐水的味道,要淡一点,因为后面还要放酱油;既然要加盐,所以自然用温水最好,那么为什么盐水要另外准备,怎么不直接加蛋液里呢?那是因为这样盐可以事先在温水里融化,和蛋液融合的更均匀;
3.蒸的时候用不着给鸡蛋液加盖,有锅盖就可以了,但记得把锅盖留出一条缝就Ok了,大火开蒸吧,中途可以打开半个盖子来看看,表面全部凝结后再蒸会就可以了,蒸锅先加热一会再放入蒸,全程也就10分钟左右; 另外三个不算是绝招:
4.淡盐水的咸度以自己口味为准,后面的酱油如果要放就记得前面要淡一点,玉米青豆和胡萝卜可加也可不加,只是点缀,稍微增加点营养而已;
5.鸡蛋液打均匀倒是很重要,如果不打均匀,蛋羹颜色黄白相间,口感也就不好了;
6.打鸡蛋总有泡泡,这问题不大,这些泡泡不会多影响成品,打完后泡泡会消掉很多,碗周边的一点小泡泡真的没有大碍。
这回你肯定能做成功!前面步骤简单,但不要小看了淡盐水,它的作用就是不让蛋液沉淀啊!
