土耳其式红扁豆汤

土耳其式红扁豆汤
在土耳其第一次吃到这种红扁豆汤。
第一天的版本是加或番茄的,非常喜欢。
于是之后都找着去吃。
几乎每家餐厅里都有这道汤,每家味道也都不尽相同,却每每都吃得很开心。
回来马上学做起来了。
按喜好加番茄、咖喱、孜然。
简简单单半小时不到的功夫就可以出锅。
配上抹了香油、烤得酥脆酥脆的法面,太舒服了。
一次可以多做一点,分装冷冻,可以吃好多次。


材料:4人份
红扁豆 200 g
蔬菜洋葱 半个
胡萝卜 1
大蒜 3
少量
Wermut 100ml
蔬菜汤
1-1.5 L
香而不辣的咖喱 1小撮
孜然粉 1小撮
香而不太辣的辣椒碎

工具:
手持式搅拌棒

1. 红扁豆头一天泡好。
2. 洋葱切丝,大蒜切薄片,姜切丝。在油锅里爆炒出香。
3. 胡萝卜去皮切薄片,加入锅里,爆出香。
4. 喷入Wermut,翻炒到Wermut挥发。
5. 加入蔬菜汤,加入红扁豆。上盖小火焖约15分钟,扁豆就全烂了。用咖喱、孜然、盐调味。

6. 用搅拌棒将所有材料打碎。撒上辣椒碎,即可。
