　　白茶（白叶茶）是一种珍罕的变异茶种，属于“低温敏感型”茶叶，白茶的鲜叶要求“三白”，即嫩芽及两片嫩叶均有白毫显露。成茶满披茸毛，色白如银，故名白茶。白茶因茶树品种、采摘的标准不同,分为芽茶(如白毫银针)和叶茶(如贡眉)。采用单芽为厚料加工而成的为芽茶，称之为银针；采用完整的一芽一二叶叶背具有浓密的白色茸毛加工而成的为叶芽，称之为白牡丹(大白茶品种树,以采自春茶第一轮嫩梢者品质为佳)。
白茶为福建的特产,主要产区在福鼎、政和、松溪、建阳等地。
白茶初制基本工艺是萎凋、烘焙（或阴干）、拣剔、复火等工序。萎凋是形成白茶品质的关键工序。
白茶具有外形芽毫完整或形态自如花朵,满身披毫，毫香清鲜汤色清中显绿，滋味清淡回甘的的品质特点。

* Bai Hao Yinzhen (白毫银针) (Silver needle): The highest grade of the Bai Hao Yinzhen should be fleshy, bright colored and covered with tiny white hairs. The shape should be very uniform, with no stems or leaves. The very best Yinzhen are picked between March 15 and April 10 when it is not raining and only using undamaged and unopened buds. Fujian Province, China.
* Bai Mu Dan (白牡丹) (White Peony): A grade down from Bai Hao Yinzhen tea, incorporating the bud and two leaves which should be covered with a fine, silvery-white down. From Fujian Province, China. (Sometimes spelled Pai Mu Tan.)

* Shou Mei （寿眉） (Noble, Long Life Eyebrow): A fruity, furry white tea that is a chaotic mix of tips and upper leaf, it has a stronger flavor than other white teas, similar to Oolong. It is the fourth grade of white tea and is plucked later than Bai Mu Dan hence the tea may be darker in color. From Fujian Province and Guangxi Province in China
* White Puerh Tea: （白普洱茶） Harvested in the spring from plantations found high on remote mountain peaks of Yunnan Province, China. Incredibly labor intensive with each step processed by hand, these luxury whites are wonderfully rich in fragrance, and possess an alluring, sweet nectar-like quality.

 白茶除了含有其他茶叶固有的营养成分外,还含有人体所必需的活性酶,国内外医学研究证明长期饮用白茶可以显著提高体内脂酶(lipoproteinlipase)活性,促进脂肪分解代谢,有效控制胰岛素分泌量,延缓萄葡粉的肠吸收,分解体内血液多余的糖分,促进血糖平衡.白茶含丰富多种氨基酸,其性寒凉,具有退热祛暑解毒之功,在产区夏季啜一杯白牡丹茶水,很少人会中暑.因此白牡丹是当地茶农夏季必备的白茶之一.在我国华北及福建产地被广泛视为治疗养护麻疹患者的良药.故清代名人周亮工在《闽小记》中载:'白毫银针,产太姥山鸿雪洞,其性寒,功同犀角,是治麻疹之圣药.'现在太姥山还有一株具有170多年树龄的福鼎大白茶原始母树名曰'绿雪芽'.白茶存放时间越长,其药用价值更高.白茶中还含有丰富的维生素A原,它被人体吸收后,能迅速转化为维生素A ,维生素A能合成视紫红质,能使眼睛在暗光下看东西更清楚,可预防夜盲症与干眼病.同时白茶还有防辐射物质,对人体的造血机能有显著的保护作用,能减少电视辐射的危害.因此在看电视过程中多喝一些白茶是有百利而无一害,尤其是少年儿童更应提倡多喝白茶,有利于保护眼睛,健体.best wish！
