1.Flour
USE THE “SPOON AND LEVEL” METHOD:
Fluff up your container of flour. Spoon the flour into your
measuring cup, then scrape off the excess with a straight edge. A
flour scoop is the best tool for this. This will get you about 4.5
ounces or 127 grams of all-purpose flour per cup.
量勺量取面粉后,要把表面推平

All-purpose flour中粉: 1 cup = 4.5 ounces(盎司) = 127 grams(克)
Bread flour高粉: 1 cup = 4.5 ounces = 127 grams
Cake flour低粉: 1 cup = 4 ounces = 113 grams
Whole Wheat Flour全麦粉: 1 cup = 4.5 ounces = 127 grams
2.Butter黄油
1 stick(条,量词) = 8 tablespoons(大勺 )= 1/2 cup = 4 ounces = 113

量取前先把粉罐摇匀
另遵循平勺原则,才可以准确称量
一定要用新鲜的,超过六个月都可以扔了,有些发酵粉在有效期前就失效了

1/4 teaspoon小勺 苏打粉 1tsp distilled vinegar 蒸馏醋,有气泡冒出就可用

4.Active Dry or Instant Yeast 酵母(跟苏打泡打等比)

HOW TO CHECK FOR FRESHNESS:
量杯中混合1tsp砂糖 1/2cup 温水110 to 115°F(43-46c)
2.25tsp酵母,搅拌均匀,酵母要全部溶于水中而不是浮在表面,5mins后酵母开始吸收水分变得活跃,10mins后酵母混合液已有丰富的泡泡,液面高度已经涨到1cup刻度线,若你的酵母活力不到这个程度就可以舍弃了

5.Granulated Sugar 白砂糖

6.Brown Sugar
You pack the brown sugar into the measuring cup until it reaches
the brim. 配方中常提到“brown sugar, lightly
packed.”这和面粉的量取方法是不同的,要满到量勺边缘线(不知道对不对)
量取黄糖要注意结块的部分,捏碎再用量勺
1 cup packed light or dark brown sugar = 7.05 ounces = 200

7.Powdered Sugar 糖粉
糖粉因易受潮结块,量取前要先过筛
1 cup unsifted 未过筛的powdered sugar = 4.4 ounces = 125 grams

8.Cocoa Powder 可可粉
可可粉也要过筛量取

9.Liquid Sweeteners 液体糖浆
