此番是第一次由Heidi独自去超市购物,先前她就与厨师做了充分的沟通,并获取了不少挑牛肉应该注意的事项。这道菜的主要食材是牛肉,牛肉蛋白质含量高,而脂肪含量低,所以味
道鲜美,受人喜爱,享有“肉中骄子”的美称。藏红花有三个世界之最:一是世界上最贵的药用植物;二是世界上最好的染料;三是世界上最高档的香料。这道菜的营养价值可见一斑。

牛胫肉配藏红花意饭的原料:
牛胫500克、特级红椒粉30克、面粉20克、香叶2片、迷迭香2片、红酒50毫升、洋葱50克、胡萝卜50克、西芹50克、番茄汁80毫升、意大利米100克、藏红花2克、白酒10克、巴马臣芝士20克、特纯橄榄油60毫升、盐和黑胡椒。
牛胫肉配藏红花意饭的制作过程:
在一个大的平底锅中放入橄榄油加热,煸炒蔬菜丁,加盐,黑胡椒调味。将牛胫调味,把面粉放入平底锅中煎至金黄色备用。将炒的蔬菜再加入番茄酱,炒一会后加入红酒等,酒味没有后再加入鸡汤。用一个干净的平底锅,放入洋葱末、黄油炒香,放入意大利米一起炒,喷匀葡萄酒,盐,胡椒,再放入藏红花、鸡汤一起烘至18分钟即可,再放黄油、帕玛特芝士粉,拌匀装盆将饭放盘正中,再将牛胫放在饭上,浇上汁水,撒上芝士粉和橄榄油。

Nobody will say no to something new in the New Year.
What an exotic dish can we bring to the forthcoming Lunar New
Year’s Eve Dinner? Beef seems not a bad idea, especially in winter;
just as the old saying goes, “Beef has the effect of Huang-qi
(Astragalus, a kind of herb in Traditional Chinese Medicine) in
conserving one’s vitality”. What about pairing it with saffron, a
rare and valuable spice? In this episode, Chef Dario Congera with
PREGO at The Westin Bund Center Shanghai wishes you a bullish year
with the delicious Beef Shank Ossobuco with Saffron
Risotto.

So Heidi finally has to shop by herself! Fortunately
she has communicated thoroughly with Dario in advance and got a few
tips in how to select good beef which plays the main role in
today’s dish. Beef is popular for its high protein, low fat and
good taste. Saffron, on the other hand, is applauded as world’s
most expensive therapeutic drug and best fabric dye as well as a
top-notch spice. When beef meets saffron, can you imagine how
nutritious this dish is gonna be?

This five-star hotel, located near the prestigious
Bund, is easily accessible. Straight palm trees and flowing water
add vigor to the capacious Lobby, which is permeated with the scent
of White Tea mingled with geranium and freesia that will cool you

imagination. Our shooting is accompanied by music as soft as the
whispers of a passionate Italian lover, just like Mr. Dario
Congera, a jovial and romantic chef to be featured in this episode.
Thanks to his meticulous attention to details, we have the
opportunity to enjoy a perfect dish—beautiful presentation, rich
colors and a glass of red wine.
Cooking starts.
Ingredients:
beef shank 500g, red paprika 30g, white flour 20g,
fresh bay leaf 2pcs, fresh rosemary leaf 2pcs, red wine 50cl,
chopped onion 50g, chopped carrot 50g, chopped celery 50gr, fresh
tomato sauce 80cl , Italian rice 100g, saffron leaf
2g, chopped onions 20g, white wine10g, grated parmesan cheese 20g,
virgin olive oil 60cl, salt and black pepper.
Cooking Procedures:
In a large sauté pan heat the olive oil sauté the
vegetables and the beef ossobuco. Season with salt and pepper. Add
red wine, tomato sauce. Cooked for about 1.5 hour.In a pan heat the
oil add the chopped onions and cooked the rice with saffron for
about 18min. Arrange in a plate the rice on top arrange the beef
ossobuco, drizzle with ossobuco sauce, grated parmesan cheese and
virgin olive oil.
A nice candlelit meal will add spice to your
