Pan-seared goose liver severed with pickled mustard salad
Ingredients: goose liver, coriander, ginger, garlic, pickle,
edamame, white sesame, salt, sugar, black pepper, white pepper,
yellow rice wine, chive oil, pepper oil.
Directions:
1. Marinate the goose liver and slice it into 1cm pieces. Add
minced coriander, ginger, garlic and white pepper. Sprinkle some
yellow rice wine, salt and sugar. Blend all the ingredients
together and marinate the mixture for another 30 minutes.
2. Rinse the pickles and chop them into slices. Blend the pickles
with edamames, chive oil and sugar for subsequent use.
3. Cover the marinated goose liver with white sesames and fry them
for 5 minutes. Sprinkle some black pepper and chive oil at the same
time. Put some pickles under the well-cooked goose liver and dress
the dish with some minced coriander.
Chocolate banana spring roll
Ingredients: Spring Roll wrapper, peanut chocolate, banana, flour,
water, crystal sugar tablet.
Directions:
1. Put some oil into the heating pan.
2. Unfold the Spring Roll wrappers and put a little chocolate and
banana on them. Wrap the Spring Roll tightly.
3. Smear some paste on the edge of wrappers to seal them.
4. Deep fry the Spring Rolls for about 3 minutes until crispy and
lightly golden in color.
5. Dress the pastry with some chocolate chips and crystal sugar
tablets.
Grilled Asparagus and Orange Foam
Ingredients: prawns, asparagus, orange, ginger, baking
powder.
Directions:
1. Peel the asparagus and chop it into 4cm sections
coarsely. Blanch them in a pot of boiled water. Scoop them out and
set aside. Peel and clean the prawns
Fry the asparagus sections in the pan or sauté them with a little
olive oil. Grill the prawns in the heating pan for 2 minutes
usually. (make proper adjustment according to the size of the
prawns)
Add baking powder into the concentrated orange juice and keep
stirring. Put the grilled prawns on the fried asparagus and
decorate it with the juice foam.

芝麻香煎鹅肝配咸菜沙律
食材:鹅肝、香菜、姜、蒜、咸菜、毛豆、白芝麻、盐、糖、黑胡椒粉、白胡椒粉、花雕酒、葱油、花椒油
制作方法:
腌制鹅肝,将鹅肝切成一厘米厚的片,然后加入香菜末,蒜末,姜米,白胡椒粉和花雕酒,盐,糖腌制30分钟。
将咸菜洗净切成薄片,加入毛豆米葱油糖搅拌均匀待用。
将腌制好的鹅肝裹上芝麻上锅煎5分钟,同时撒入黑胡椒粉以及葱油出锅要求外焦里嫩。
将拌好的咸菜装盘,然后将煎好的摆放在其上撒上香菜末即可。
香蕉巧克力春卷
食材:春卷皮、花生巧克力、香蕉、面粉、水、水晶糖片
制作方法:
热锅内加入油
春卷的制作:摊开春卷皮,依次均匀的放上巧克力和香蕉。均匀的把春卷皮卷紧。
用面糊摸在春卷皮的边上做封口。
把做好的春卷放入油中3分钟左右,炸至颜色金黄。
上菜时炸春卷配巧克力碎和水晶糖片。
烤海虾配烤芦笋和橙子泡沫
食材:海蜇虾、芦笋头、橙子、姜、起泡粉
制作方法:
芦笋去皮、去茎后,切成4厘米长,过热水后,放置在一旁。将海虾剥皮、去须。
在煎锅里扒芦笋或用少许橄榄油炒芦笋。在热平底锅里扒海蜇虾。根据海蜇虾的大小来
定时间,通常情况下双面扒的时间在2分钟内。
将橙汁浓缩至一半,加入起泡粉后,搅拌起泡。将海蜇虾放置于芦笋上,用泡沫装饰。
